Plum Streusel Cake

Even though it happens every year, somehow I am always sort of surprised that the Jewish holidays come in such a jumble. We celebrate one holiday on top of another and are busier than ever, observing and celebrating.

Not to mention — LOTS of food. 

I don't want to even count the calories.

And there's still Sukkot to come. 

This year I didn't make my usual Plum Torte for Rosh Hashanah. I needed a change of some of my menu items.

But I still can't resist those once a year Italian-style prune plums (President/Empress plums), so I decided to use them for this Plum Streusel Cake. It turned out to be one of my favorites during the holiday.

If you are still looking for a fabulous dessert for Sukkot -- try this one. Btw, you can make this with any variety of plum. But plum season is almost over, so do take advantage while you can.

 

Plum Streusel Cake

Streusel:

  • 1/4 pound unsalted butter

  • 1/4 cup granulated sugar

  • 1/4 cup packed brown sugar

  • 1-1/4 cups all-purpose flour

  • 1 teaspoon ground cinnamon

  • 1/8 teaspoon ground nutmeg

Melt the butter and set it aside to cool. Place the sugar, brown sugar, flour, cinnamon and nutmeg in a bowl and mix until well blended. Pour in the butter and blend it in. Let stand for 4-5 minutes, then crumble the mixture using your fingers. Set aside.

Cake:

  • 1/2 cup butter, melted and cooled

  • 2 cups all-purpose flour

  • 1/2 cup sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon salt

  • 1 teaspoon freshly grated lemon peel

  • 2 large eggs

  • 1 cup milk

  • 6-8 Empress plums, sliced, pit removed (President plums, 10-12 Italian prune plums)

Preheat the oven to 350 degrees. Make the streusel and set it aside. Lightly grease a 9-inch springform pan. Melt the butter and set it aside to cool. Combine the flour, sugar, baking powder, baking soda, salt and lemon peel in the bowl of an electric mixer. In another bowl, combine the eggs, milk and melted butter. Pour the liquid ingredients into the dry ones and stir only to combine: do not overbeat. Turn the batter into the prepared cake pan. Top with the plum slices. Cover with the streusel. Bake for about 45 minutes or until a cake tester inserted into the center comes out clean. Let cool in the pan for 15 minutes. Remove the outer ring from the pan and let the cake cool completely.

Makes one cake serving 8

Baked Apples with Date Honey

If you've never tried date honey, you've been missing something delicious in your life. I've been using it for years in all sorts of dishes from Rosh Hashanah Honey Cake to the Thanksgiving sweet potatoes.

It isn't bee honey. Date honey (known as Silan) is a syrup made from dates. It's thick and sweet like honey, but bee honey has more hints of spice, nuts or flowers, date honey is richer and more mellow.

I have tried several brands and like Date Lady* because of its smooth texture. Last summer, at the Fancy Food show I tasted the company's new California Date Syrup and absolutely loved it. The California syrup has a buttery taste, while the classic middle eastern variety is more molasses-y. Both are wonderful but I preferred the California syrup for delicate dishes such as baked apples and the bolder syrup for breads, cakes and muffins.

The California syrup works perfectly for baked apples, one of our traditional Rosh Hashanah desserts.

Baked Apples with Date Honey

  • 4 baking apples
  • 1/4 cup raisins
  • 1/4 cup diced dried figs
  • 2 teaspoons grated fresh orange peel
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon freshly grated nutmeg
  • 1/4 cup date honey
  • 1/2 cup orange juice
  • 1/2 cup water
  • 2 tablespoons sugar, optional

Preheat the oven to 375 degrees. Wash the apples and remove the core with an apple corer or small knife, leaving about 1/2" on the bottom.  Peel the apples halfway down from the top and place them in a baking dish. Mix the raisins, dates, orange peel, cinnamon, nutmeg and date honey. Stuff this mixture into the apple hollows. Mix the juice and water (plus extra sugar if desired) and pour over the apples. Bake for 45 minutes, basting occasionally with the pan juices, or until the apples are tender. Serve warm or at room temperature.

Makes 4 servings

 

 

 

 

 

Stuffed Squash with Thanksgiving Leftovers

Turkey leftovers? 

Sure, there's sandwiches, salad and so on. 

How about a one-pot meal-in-one you can get ready way ahead and pop it into the oven a few days after Thanksgiving? Something tidy, compact, with a profusion of appealing color? That includes so many food groups?

Like this Stuffed Acorn Squash.

Note: you can make the squash and filling ahead separately. These are good hot or at room temperature.

STUFFED ACORN SQUASH

  • 4 small acorn or carnival squash
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 carrots, chopped
  • 1 cup chopped yellow squash 
  • 1-1/2 cups finely chopped cooked turkey
  • 1 cup chopped fresh spinach
  • 1/4 cup dried cranberries or raisins
  • 1/4 cup plain breadcrumbs
  • 2 tablespoons chopped fresh parsley
  • 2 teaspoons chopped fresh thyme
  • 1/4 teaspoon cayenne pepper, optional
  • 2 large eggs
  • salt and freshly ground black pepper to taste

Preheat the oven to 400 degrees. Cut the squash about 1/4 to 1/3 of the way down and remove the cap (you can bake it and serve it for decoration). Scoop out the seeds (you can rinse them off and roast them separately to use as a snack). Wrap the squash in aluminum foil and bake for about 35-45 minutes or until tender. Set aside. Reduce the oven heat to 350 degrees. While the squash is roasting, heat the olive oil in a sauté pan over medium heat. Add the onion and carrots and cook for 3-4 minutes, to soften them slightly. Remove the pan from the heat. Add the squash, turkey, spinach, cranberries, breadcrumbs, parsley, thyme and cayenne pepper (if used) and toss the ingredients to distribute them evenly. Mix in the eggs and salt and pepper to taste. Spoon equal amounts of the mixture into the baked squash hollows. Bake for about 30 minutes or until golden brown.

GIANT Knish

Anyone who reads this blog knows that potatoes are my go-to comfort food. My magic medicine for when I'm stressed out.

So I'm definitely going to need something potato tonight when Ed and I have our debate-watch group over. (By the time this election is over my potato consumption for the year will be way over the limit.)

So I made a stuffed potato roll. Actually mashed potatoes with caramelized onions wrapped inside puff pastry.

Actually, a giant knish.

And guess what!? This dish is absolutely perfect for my Vegetarian Break-the-Fast, so I made one for that occasion too!

And also guess what!? It's also perfect for Meatless Monday. And also for Sukkot, when it is traditional to serve stuffed foods.

All in all, this is a big, big winner for whenever. Really. Whenever.

 

Giant Knish

  • 3 pounds all-purpose potatoes
  • 4 tablespoons olive oil
  • 1 large sliced onion
  • 1 large egg
  • 1 teaspoon salt or to taste
  • freshly ground black pepper to taste
  • 2 sheets frozen parve puff pastry

Preheat the oven to 375 degrees. Lightly grease a flat baking sheet. Peel the potatoes, cut them into chunks and boil them in lightly salted water for about 15 minutes, or until they are cooked through. Drain the potatoes and return them to the pan. Add 2 tablespoons of the olive oil and mash the potatoes until they are fluffy. While the potatoes are cooking, heat the remaining 2 tablespoons olive oil in a sauté pan over medium heat. Add the onion and cook for 12-15 minutes or until lightly browned. Add the onions to the potatoes. Add the egg, salt and pepper and stir gently to mix ingredients. Let cool. Using one sheet of puff pastry at a time, roll the dough slightly thinner. Place half the potato filling down the center of the dough, using up the middle 1/3 of the dough and leaving a one-inch margin at both of the short ends. Enclose the filling: place one side of the dough over the filling, then place the other side of the dough over the filling. Press the short ends to enclose the filling at the top and bottom. Place the roll, seam side down, on the prepared baking sheet. Refrigerate for about 30 minutes or until the dough feels cool and firm. Bake for 30-35 minutes, or until golden brown. Cut with a serrated knife. 

 

Makes 2 rolls, each serving 6 people

 

 

Plums - as Crisp, not Torte

A few weeks ago I spotted Italian prune plums at Fairway. It was 96 degrees out, in the middle of a heat wave, and here I was looking at the first culinary signs of autumn.

But there they were, the plums, and of course I bought several pounds of them.

My thoughts went immediately to Plum Torte, the iconic Rosh Hashanah dessert. I make one every year.

But those plums are too good to reserve for just one holiday.

So I made these Italian Prune Plum Crisps.

Crisps are a more homey-style dessert than a stately looking Plum Torte. However, I think they are just perfect for the holidays. Easier too.

Or, why not serve both?

 

Plum Crisp with Oat Streusel

Filling:

  • 36 Italian prune plums
  • 1/3 cup brown sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour

Crust:

  • 1/2 cup all-purpose flour
  • 1/2 cup quick cooking or rolled oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon grated nutmeg
  • 1/4 teaspoon salt
  • 5 tablespoons unsalted butter or margarine, cut into chunks

Preheat the oven to 350 degrees. Combine the plums, brown sugar, lemon juice and flour in a baking dish. Set aside. Place the flour, oats, brown sugar, cinnamon, nutmeg and salt in a bowl and mix ingredients to distribute them evenly. Add the butter and work it into the dry ingredients with fingertips or a pastry blender until the mixture looks like coarse meal. Place the oat mixture over the fruit. Bake for 30 minutes or until the crust is crispy and brown.

Makes 6-8 servings.

 

 

 

Nectarine or Peach Crisp

Autumn may be here, officially speaking. But I couldn't resist the gorgeous nectarines at a local market. I bought a dozen. Large. 

I let them ripen for two days on my counter and they had that end-of-summer ripe, sweet perfume. I couldn't wait to polish one off, anticipating the juicy flesh on my tongue, savoring the last essences of summer.

They were mealy. Dry. Huge disappointment.

But I hate to throw food out.

Ed wanted me to poach them. It seemed like a good idea because poaching not-so-good fruit can enhance their flavor.

They were so big that before poaching I decided to cut them in half, remove the pits and poach the halves. But when I cut them they were full of brown spots. Beyond poaching.

Huge disappointment. But I hate to throw food out.

So I cut around the brown spots and from 12 large nectarines had enough flesh to make a crisp for 6 people. 

Now, that was not at all disappointing. In fact it was just perfect. I added just a bit of honey and enough lemon juice to bring out the best of what was left of these nectarines.

Here's the recipe, for when you have not-so-good peaches or nectarines (you could make this crisp with pears too), and I bet it would be especially delicious if your fruit started out wonderful too.

Peach/Nectarine Crisp with Oat Crust

Crust:

  • 3/4 cup old fashioned rolled oats
  • 1/3 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 4 tablespoons cold, unsalted butter (or substitute)

Filling:

  • 6 large peaches or nectarines
  • 2 tablespoons all-purpose flour
  • 2 tablespoons honey
  • 1 tablespoon lemon juice

 

Preheat the oven to 375 degrees. In a bowl combine the oats, flour, brown sugar, cinnamon and salt. Add the butter and work it into the dry ingredients until the mixture is crumbly. Set aside. Peel the peaches and discard the pits. Slice the peaches into a bowl. Add the flour, honey and lemon juice and toss the ingredients. Place the mixture in the baking dish. Scatter the oat mixture on top of the fruit. Bake for 35-40 minutes or until the crust is golden brown.

Makes 6 servings

 

 

Easier Than Pie Fruit Galette

If you're ever in need of a recipe for a gorgeous, fabulous tasting dessert that looks as if you fussed to create a culinary artistic masterpiece when it really was one of the easiest desserts you ever made -- here it is.

Plum galette.

Even the name is fancy. But this one is a cinch to make and guaranteed to please.

President (Empress, Italian-prune) plums are coming to the end of their season, so get them while you can. Use them for lots of recipes, like Plum Tart or  or Clove and Lemongrass Poached Plums.

Or for this easy puff pastry tart. It's a lovely dessert for family, company, Rosh Hashanah, Sukkot, Shabbat or any old time.

Plum Galette with Orange and Rosemary

(If you can’t find frozen dough pastry squares in the frozen section of your supermarket, buy regular puff pastry sheets and cut the sheets into squares.)

  • 6 puff pastry squares (4-inch)
  • 3 peaches or 6 President or Empress (or about 8 Italian prune) plums, cut into wedges (about one pound)
  • 3-4 tablespoons sugar
  • 1 teaspoon grated fresh orange peel
  • 1 teaspoon chopped fresh rosemary

Preheat the oven to 425 degrees. Place the pastry squares on a parchment paper lined baking sheet. Prick the dough in a few places. Arrange equal amounts of the fruit on top of each square, leaving a border of 1/2-inch. Mix the sugar, orange peel and rosemary. Sprinkle equal amounts of the sugar mixture on top of the fruit (using the extra sugar if you have a real sweet tooth). Pinch the dough border to make it slightly higher and closer to the fruit. Refrigerate for about 20 minutes. Bake for about 20 minutes or until golden brown.

 

Makes 6 servings

 

 

Poached Figs with Apricot and Cinnamon Sauce

Remember a couple of weeks ago I mentioned that I bought some fantastically delicious peaches at Costco? Well, this week I saw a boxful of fabulous-looking, velvety-skinned figs that were so picture perfect that I had to buy them.

Mostly we ate them out of hand. I cut some up for my morning yogurt. I ate one or two garnished with crumbled blue cheese.

The rest? I poached them, reduced the sauce until it was nice and thick, set the fruit up in a pretty plate, added a dab of whipped cream and a sprinkle of chopped toasted almonds and VOILA! a fancy dessert.

So easy.

Here’s the recipe:

Poached Figs with Apricot and Cinnamon Sauce

  • 1 cup apricot nectar

  • 1 cup water

  • 1/4 cup honey

  • 1 cinnamon stick, about 3-inches long

  • 2 strips orange peel, each about 2-inches long

  • 12 large fresh figs

  • 1 cup whipped cream

  • finely chopped toasted almonds

    Combine the apricot nectar, water, honey, cinnamon stick and orange peel in a saucepan over medium-high heat. Bring the liquid to a boil, reduce the heat to low and simmer for 15 minutes. Add the figs and simmer for about 8-10 minutes or until the figs are tender but not overly soft. Remove the pan from the heat. Remove the figs to a dish and let cool. Remove and discard the cinnamon stick and orange peel from the pan. Boil the liquid over high heat for about 5 minutes or until syrupy. Let cool. Spoon some of the cooled syrup onto 6 dessert plates. Cut the figs in half and place 4 halves on each of the plates. Spoon a dollop of whipped cream on top of each fig half. Scatter the nuts over the figs.

Makes 6 servings

Mandelbrot

See these slices of Mandelbrot? I offered one to a friend of mine who is Italian-American and he said “I love biscotti. Thanks!”

And of course he was right. Mandelbrot is the Jewish version of biscotti: cookies (or biscuits) that have been baked twice. First you bake the sweet dough in the form of a low cake and when it is finished baking and cools, you slice the loaf and toast the slices until they’re dry and crispy.

In my family we prefer the slices soft, so I serve Mandelbrot after only one baking, which means they actually aren’t exactly bi-scotti. But they are really good. At your house you can do it either way of course.

Mandelbrot (like biscotti) can be plain or be swirled with chocolate or contain chopped nuts and/or fruit. This is our favorite family version. 

It freezes well in case you want to make some in advance.

Mandelbrot

  • 1/2 cup butter or margarine

  • 1 cup sugar

  • 3 large eggs

  • 2-1/2 to 3 cups all-purpose flour

  • 2-1/2 teaspoons baking powder

  • 1 tablespoon brandy or apple juice

  • 1 teaspoon almond extract

  • 1/4 teaspoon salt

  • 1/2 cup chopped nuts

  • 1/3 cup cut up candied cherries

  • 1/3 cup chocolate chips

  • 1/3 cup raisins

Preheat the oven to 350 degrees. Lightly grease a cookie sheet. Cream the butter and sugar together in the bowl of a mixer set at medium speed for about 2 minutes or until creamy and well blended. Add the eggs one at a time, beating after each addition. Add 2-1/2 cups of the flour, baking powder, brandy, almond extract and salt and beat at medium speed until the ingredients are thoroughly blended. Blend in the remaining flour if the pastry is very sticky. Fold in the nuts, cherries, chocolate chips and raisins. On a lightly floured surface, divide the dough into thirds and shape each piece into an oval loaf about 1-1/2 to 2 inches thick. Place the loaves on the cookie sheet. Bake for 25-30 minutes or until the loaves are golden brown. Remove from the oven and let cool. Serve sliced, as is, or toast the slices for extra crispness.

Makes 3 loaves. 

NOTE: sometimes I cut the dough in half, rather than thirds, to make larger loaves/slices. These need a few more minutes of baking time.

Best Hummus Ever

Best hummus ever?

That’s what everyone told me Wednesday night at our Break-the-fast. They said it was the best hummus they ever tasted. Also the best texture; smooth but with some graininess; moist but not pasty.

Maybe they were all just hungry? And hummus is the first nibble of food they consumed in 24 hours, the initial tidbit to prepare the stomach before eating dinner?

But I kept it out even during dinner and by the end of the night it was gone, gone gone. Several people took a bit more to eat with the Mujadarah, Spinach Pie, Kugel, chopped salad and egg salad.

So, here’s the recipe. Try it yourself and let me know what you think. 

Btw, hummus stuffed cherry tomatoes is a good treat for Sukkot. 

 

HUMMUS WITH ZATAR

  • 15 ounce can chickpeas

  • 2 large cloves garlic

  • 1/4 cup tahini

  • 1/4 cup lemon juice

  • 2 tablespoons olive oil

  • 2 tablespoons chopped fresh parsley

  • 1 teaspoon paprika

  • 1/2 teaspoon salt

  • 1/2 teaspoon zatar

Drain the chickpeas but reserve the liquid. Place the chickpeas in a food processor. Cut the garlic into smaller chunks and add to the food processor. Add the tahini, lemon juice,   olive oil, parsley, paprika, salt and zatar. Process to combine ingredients into a rough puree. Continue to process while adding some of the reserved liquid though the feed tube until the mixture reaches the desired consistency (approximately 3-6 tablespoons).

Makes about 1-1/2 cups
