Plain Old Banana Bread

This is the time of year - just past Purim - when people who observe Passover clean out their cabinets (a good spring clean!), throw out stuff they’re never going to use or that’s past a “sell-by” date, give ingredients away and use up prohibited ingredients such as flour, cookies, bread and such.

I’m also always looking for ways to use up uneaten bananas. So, for me, one of the most delicious ways to use up the flour AND the bananas is: Banana Bread!

Like this very simple one to which you could add: chocolate chips, raisins, chopped nuts, crystallized ginger, candied orange peel (about 1/2 to 3/4 cups of any extra).

plain old BANANA BREAD

  • 2 cups all-purpose flour

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon freshly ground nutmeg

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 2/3 cup sugar

  • 1/3 cup vegetable oil

  • 1 teaspoon vanilla extract

  • 2 large eggs

  • 1/2 cup buttermilk

  • 3 ripe medium bananas, mashed

Preheat the oven to 350 degrees. Lightly grease a 9”x5”x3” loaf pan. Mix the flour, cinnamon, nutmeg, baking soda, baking powder and salt in a bowl and set aside. Mix the sugar and vegetable oil together in the bowl of an electric mixer set at medium speed for 1-2 minutes or until thoroughly combined. Add the vanilla extract and eggs and beat them in until well combined. Add the buttermilk and bananas and blend them in thoroughly. Add the flour mixture and blend it in. Spoon the batter into the prepared loaf pan. Bake for about one hour or until a cake tester inserted into the center comes out clean.

Makes one loaf

Tomato Eggplant Mushroom Sauce

This recipe was born of my desire to use whatever is left in my pantry and fridge, my need to not waste food, my love of inventing new recipes.

During this awful pandemic, I have not shopped. I use a shopping service, so I am more mindful when I order because I can’t just hop in the car and go to the store for a tomato.

A few months ago I was at the tail end of what was left of an order, the list I keep almost ready for the next shop. I had some tomatoes and mushrooms, a few scallions and some pasta. I always have Parmesan cheese in the fridge. I chopped the vegetables (including a clove of garlic), added some fresh oregano (it was still summer so I had some fresh from the garden) and stewed the sauce until everything was soft and fragrant. We had it for dinner over spaghetti and Ed declared it a miracle.

I have made a variation of this dish several times since then. Once, I had an eggplant, so I added that. Another time I threw in some chopped zucchini. I sometimes replaced the scallion with onion. And of course, with no fresh herbs from the garden (and none left in the fridge) I have seasoned the sauce with dried oregano.

That’s how versatile this recipe is. It’s so easy. We load it with freshly grated Parmesan, but it’s also delicious without the cheese, served as a kind of saucy side dish for beef — steak, meatballs, and so on.

Here’s one version but feel free to change this and that.

Chunky Tomato-eggplant-Mushroom Sauce

  • 3 tablespoons olive oil

  • 1 medium onion, chopped

  • 2 cloves garlic, chopped

  • 4-5 tomatoes, chopped or two cups cut up cherry or grape tomatoes

  • 1 cup diced eggplant

  • 6 ounces mushrooms, cut into chunks

  • 1 tablespoon chopped fresh oregano or basil

  • salt and pepper

  • cooked pasta

Heat the olive oil in a large saute pan or wok/pan over medium heat. Add the onion and cook, stirring occasionally, for 3 minutes. Add the garlic and cook for another minute. Add the tomatoes, eggplant, mushrooms, herb and salt and pepper to taste and cook, stirring occasionally for about 8-10 minutes or until the mixture is thick and sauce-like. Serve over pasta (or use as a side dish for grilled steak or chicken).

Makes enough for one pound of pasta

Smoked Salmon and Cottage Cheese Pie

Last week I made the ideal dish.

By that I mean it is light and easy to eat during the scorching days of summer.

It’s meatless, so perfect for the Nine Days and any other time we don’t want to eat the usual meat-two-veggie or salad dinner.

I got to use up leftovers and bits of this and that (smoked salmon, cottage cheese, cream cheese).

It served as dinner and also as hors d’oeuvre — I rewarmed the leftover portion and cut it into bite-size pieces for some socially distanced company.

You can use any leftover fish. I happened to have smoked salmon, so that’s what I used.

Smoked Salmon and Cottage Cheese Pie

  • 1 tablespoon butter

  • 1 large shallot, chopped

  • 1 partially baked pie crust

  • 3-4 ounces smoked salmon, chopped

  • 2 tablespoons cream cheese

  • 4 large eggs

  • 1 cup cottage cheese

  • 1 cup half and half

  • 2 tablespoons chopped fresh dill

  • 1/2 teaspoon salt or to taste

Preheat the oven to 375 degrees. Heat the butter in a small frying pan over medium heat. When the butter has melted and looks bubbly, add the shallot and cook for 3-4 minutes or until softened. Spoon the shallot onto the bottom of the partially baked pie crust. Scatter the salmon pieces on top. Cut the cream cheese into small pieces and scatter them on top. In a bowl, beat the eggs, cottage cheese, half and half, dill and salt together until well mixed. Pour into the pie crust. Bake the pie for about 45 minutes or until the top is nicely browned and the custard has set.

Makes 4-6 servings

Whitefish Cakes with Asparagus and Egg

If you’re refraining from eating meat during the Nine Days, or because the weather is hot and humid and the thought or eating something heavy like meat is beyond your emotional capacity or you just love the occasional meatless meal, try these fish cakes!

I had leftovers from a large smoked whitefish that we didn’t finish — but it would work with any cooked fish (I’ve made this dish with smoked trout and cooked salmon).

It’s also the kind of amazingly versatile recipe you need during a pandemic when you may not be able to shop or find the exact ingredients you need and you also don’t want to waste any food.

So, for example, if you don’t have red onion, use scallion or chives or shallot or plain old yellow onion.

No matzo meal? Use dry bread crumbs. Or panko. No parsley? Substitute fresh dill, basil or thyme.

Add a fried egg, a vegetable (here I’ve shown it with asparagus but carrots, spinach, cooked kale and so on would work too) and the meal is complete.

Whitefish Cakes with Asparagus and Egg

  • 2 cups mashed smoked whitefish

  • 1/3 cup chopped red onion

  • 2 tablespoons chopped fresh parsley

  • 1/4 cup matzo meal

  • 2 large eggs

  • 1/2 cup matzo meal, approximately

  • 20-24 asparagus spears

  • 2 tablespoons butter, margarine or vegetable oil

  • 4 large eggs

Place the whitefish, red onion, parsley and 1/4 cup matzo meal in a bowl and mix briefly. Add the eggs and mix to combine the ingredients. Shape into 4 thick patties (about 1/2-inch). Place the 1/2 cup matzo meal on a dish and press the fish cakes into the matzo meal to coat both sides. Refrigerate the patties for 30-60 minutes. Heat the oven to warm (or use a warming drawer.) Heat the butter in a large saute pan over medium-high heat. Fry the fish cakes for about 3-4 minutes per side or until crispy. While the fish cakes are frying, steam the asparagus for 3-4 minutes or until crisp tender. When the asparagus are cooked, place equal amounts on dinner plates and top each with a fish cake. Keep warm in the oven or warming drawer. Heat the remaining tablespoon butter; when it has melted add the eggs and fry until desired consistency. Place one egg on top of each asparagus-topped fish cake.

Makes 4 servings

Buttermilk Bread

I use buttermilk a lot. I like it to drink but mostly I like the vaguely tangy flavor it gives to certain food, like salad dressing and cold summer soups, and the way certain kinds of baked goods, like biscuits and scones, come out so much flakier.

Last week I bought some buttermilk and made a dairy-based Three Cabbage Cole Slaw.

I had lots of buttermilk left, so I got busy and among the foods I made was buttermilk bread.

Big success!

It’s kind of a fluffy white yeast bread, but with a much richer flavor than regular white bread.

We discovered that it’s perfect for tuna fish, egg salad and first-of-summer tomato sandwiches. My husband says he likes it best toasted, dipped into olive oil (plain or topped with tomato).

Other uses? Base for bruschetta. Toasted, instead of pita for dipping into hummus. Spread with orange marmalade. Like that.

Next up for buttermilk —— pudding. Keep watching this space.

Buttermilk Bread

  • 1 package active dry yeast (2-1/4 teaspoons)

  • pinch of sugar

  • 1/3 cup warm water (105-110 degrees F)

  • 3 tablespoons butter

  • 3 tablespoons honey

  • 1 cup buttermilk

  • 3-3/4 cups flour (preferably bread flour), approximately

  • 1-1/2 teaspoons salt

  • melted butter, seeds, etc., optional

Lightly butter a bread loaf pan (about 9”x5”) and set aside. Place the yeast in a small bowl, add the sugar and warm water and mix thoroughly to dissolve the yeast (a small whisk works best). Set aside for about 5 minutes or until bubbly. Heat the butter and honey together over low heat until the butter has melted. Remove from the heat. Heat the buttermilk over low heat for 2-3 minutes or until just warm to the touch. Remove from the heat. Place the flour and salt in the bowl of an electric mixer. Add the warm buttermilk, the melted butter mixture and the yeast mixture. Mix and knead the ingredients for 3-4 minutes or until smooth. If the dough is sticky, add some more until the dough is soft but not sticky. Cover the bowl and let the dough rise in a warm place for about 55-60 minutes or until doubled in size. Knead the dough briefly and place it in the prepared bread loaf pan. Preheat the oven to 350 degrees. Let the dough rise for another 30 minutes. Brush the top with melted butter and scatter with seeds, if desired. Bake the bread for about 35 minutes or until well risen and golden brown.

Homemade Lekvar

A few days ago, while looking into my cupboard for something, I found an unopened package of prunes that had reached its "best by" date. Indeed, when I opened it, the prunes were a bit too dry for tasty snacking.

But!

I can’t throw out perfectly good food. Rather than discard, I decided to make my own lekvar (and then use it for all sorts of recipes).

For several mornings I had some lekvar with yogurt (awesome). Just like the old days when Dannon had a perfectly wonderful prune yogurt.

I also made some of our treasured family recipe of butter cookies and used the lekvar for filling the center.

I don't ever have to buy lekvar again.

Here’s the recipe. I added fresh ginger to a portion and cooked it separately. It’s not typical for lekvar but I thought it added a good flavor. I list it as an option, but encourage you to try it too.

I’ll remember this recipe next Purim when I need to fill some homemade hamantashen.

Prune Lekvar

  • one pound pitted prunes (about 2 cups)

  • mixture or orange juice, apple juice or other fruit juice plus water (enough to cover the prunes)

  • 4 slices of peeled fresh ginger (1/4-inch thick)

  • pinch of salt

  • 5 tablespoons packed brown sugar

  • 1 tablespoon fresh lemon juice

Place the prunes in a saucepan. Add juice plus water, using enough to cover the fruit and add the ginger and salt. Bring the liquid to a boil over high heat. Lower the heat, cover the pan and simmer for about 20 minutes or until the prunes are soft. Be sure there is some liquid left in the pan; if not, add a bit more. Stir in the sugar and cook for another 5-6 minutes. Remove from the heat, stir in the lemon juice and puree using a blender hand blender.

Makes 2 cups

Banana Marble Bread

Here’s a comforting treat. The swirl of chocolate makes plain old banana bread a bit more festive.

If you’re socially distancing at home like so many of us, this Banana Marble Bread is a tasty way to pass the time, use what you have and add a comforting fragrance to your home.

Banana Marble Bread

  • 3 ounces semisweet chocolate

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 cup sugar

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 3 medium ripe bananas

  • 1/4 cup fruit juice, oat milk or other non-dairy milk (or use dairy milk)

  • 1 teaspoon vanilla extract

Preheat the oven to 350 degrees. Grease a 9”x5”x3” loaf pan. Melt the chocolate and set it aside to cool. Mix the flour, baking soda, baking powder and salt in a bowl and set it aside. Beat the sugar and vegetable oil with a handheld or electric mixer set at medium speed for 2-3 minutes or until the mixture is well blended. Add the eggs one at a time, beating after each addition. Mash the bananas and add them to the sugar mixture. Beat thoroughly until the ingredients are well blended. Add the flour mixture and beat for 1-2 minutes to blend the ingredients thoroughly. Stir in the juice and vanilla extract. Pour the batter into the prepared pan. Pour the melted chocolate on top and use a knife or spatula to swirl it through the banana batter. Bake for 1 hour or until a cake tester inserted into the center comes out clean. Cool the bread in the pan 15 minutes. Remove the bread from the pan and let it cool on a cake rack.

 Makes one bread serving 10-12

Fresh Ginger Cake

When life gives you lemons, you make lemonade.

And, when life gives you fresh ginger, you make ginger cake (to go with ginger tea of course).

I’ve been using Instacart to get groceries recently because of the stay-at-home and social distancing Ed and I are following strictly. This delivery service has been excellent and I am incredibly grateful to the men and women who have shopped for us and delivered everything to our front door.

So first, bravo and thank you to them.

There have been some mistakes, none really worth talking about, but one that I found amusing.

I ordered a piece of fresh ginger and my shopper bought a pound!

That’s a lot of ginger.

But okay. I’ll use it.

First of all, I love ginger steeped in near-boiling water for tea. I’ve been drinking a lot of that recently. It’s healthy and a perfect way to stay hydrated too.

And of course, to go with the tea: cake. Like gingerbread. Except I didn’t have enough molasses so I used a mixture of date honey and regular honey. And I used fresh ginger instead of dried.

Perfect. This cake is milder than traditional gingerbread (because of the missing molasses), yet with the familiar heat because fresh ginger has a bit of a bite.

Would have loved some whipped cream, but alas, no cream in the house.

Fresh Ginger Cake

  • 3/4 cup butter

  • 3/4 cup date syrup (silan) (or use molasses)

  • 1/4 cup honey (or use molasses)

  • 1/2 cup brown sugar

  • 3 cups all-purpose flour·      

  • 2-1/2 teaspoons baking soda

  • 1/2 tsp. salt

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon grated fresh nutmeg

  • 1/4 cup grated fresh ginger

  • 2 large eggs

  • 1/3 cup milk

Preheat the oven to 350 degrees. Lightly grease a 9”x9” cake pan. Place the butter, date syrup, honey and brown sugar in a saucepan and cook, stirring occasionally, over medium heat until the butter has melted. Stir to blend ingredients thoroughly. Set aside to cool. Mix the flour, baking soda, salt, cinnamon and nutmeg together. Pour the date liquid mixture over the flour mixture and beat the ingredients to blend them thoroughly. Add the ginger and eggs and beat them in. Pour in the milk and mix until the batter is smooth. Pour the batter into the pan. Bake for about 40 minutes or until a cake tester inserted into the center comes out clean.

Makes 8-10 servings

It’s funny how despite the years that pass and the changes we all make to our diets, there are some foods we never give up. For me, one of those dishes is salmon latkes. Ed won’t eat them. This is a solo thing.

Salmon latkes were also my Mom’s favorite go-to dish (red canned salmon, she insisted). She made them for herself. My Dad didn’t wouldn’t eat them. 

When April comes I think about salmon latkes more because it’s the month my mom passed away and yahrzeits always conjure memories, don’t they?

So I have been thinking salmon latkes lately.

Unlike my mom, I can’t let a recipe go without thinking about how I could change it. How many salmon latke variations can I create?

Well, not as many as banana bread, but when you’ve got leftover (or canned) salmon, there’s a lot you can do with it. 

Here’s the latest version. It’s a good dish for Passover either to replace gefilte fish as a fish course at a Seder, or for lunch or even dinner (make larger burger-type patties).                                                                                                                                 

Salmon, Potato and Spinach Patties (Croquettes, Latkes)

  • 1 pound Yukon Gold potatoes

  • 12 ounces cooked salmon

  • 1 cup packed baby spinach leaves, washed, dried and coarsely chopped

  • 2 large eggs

  • 1/2 cup matzo meal

  • 2 chopped scallions

  • 1 tablespoon lemon juice

  • 2 tablespoons chopped fresh parsley

  • 2 tablespoons chopped fresh cilantro

  • salt and freshly ground black pepper to taste

  • 1/4 cup matzo meal

  • vegetable oil

Peel the potatoes, cut them into chunks and cook them in lightly salted boiling water for about 15 minutes or until tender. Drain and place in a bowl. Mash the potatoes with a fork. Add the salmon and spinach and mix the ingredients to distribute them evenly. Add the eggs, 1/2-cup matzo meal, scallions, lemon juice, parsley, cilantro and salt and pepper to taste. Mix the ingredients to distribute them evenly. Shape the mixture into 16-20 small patties. Press the patties into the remaining 1/4-cup matzo meal, to coat both sides. Heat about 1/4-inch vegetable oil in a large sauté pan over medium heat. Fry the patties for 2-3 minutes per side or until golden brown and crispy. Serve 2 patties per person.
