Chocolate-Dipped Dried Fruit

I love when one idea works for so many different things. Take chocolate dipped dried fruit for instance. It’s easy to prepare. Who doesn’t like that? It’s a lovely Valentine’s gift (and a whole lot cheaper than boxed fancy candy!). It’s also a perfect mishloach manot gift for Purim (and a whole whole lot cheaper than a gift basket!). And here’s one more — it’s a delicious, sweet end to a Superbowl meal!

All of you have to do is melt chocolate, dip the fruit halfway in and place the dipped item on parchment paper or foil (it will set in about 30 minutes). Of course you can do the same thing with fresh fruit! How good is this!?

NUT FREE CHOCOLATE CHUNK GRAND FINALE COOKIES

• 1 cup all-purpose flour
• 1-1/2 teaspoons baking soda
• 1-1/2 teaspoons baking powder
• 1-1/2 teaspoons ground cinnamon
• 1/2 teaspoon salt
• 3/4 cup unsalted butter
• 3/4 cup packed brown sugar
• 3/4 cup sugar
• 1 large egg
• 1/4 cup orange juice
• 1-1/2 teaspoons vanilla extract
• 2 cups quick cooking oats
• 2 cups chocolate chips
• 1 cup shredded coconut
• 1/2 cup raisins
Preheat the oven to 350 degrees. Lightly grease cookie sheets. Mix the flour, baking soda, baking powder, cinnamon and salt in a bowl and set aside. In the bowl of an electric mixer, beat the butter, brown sugar and sugar at medium speed for about 2 minutes or until smooth, creamy and well blended. Add the egg, orange juice and vanilla extract and beat them in, blending thoroughly. Add the flour mixture and blend it in thoroughly. Add the oats, chocolate chunks, coconut and raisins and mix them in. Scoop heaping tablespoons of dough and place on the cookie sheets, leaving some place between the blobs for the cookies to spread. Bake for 14-16 minutes or until golden brown and crispy. Let cool on the cookie sheets for 3 minutes then remove to a cake rack to cool completely.

Makes 36-42 cookies

Candied Lemon Peel

You know those two lemons that ripened on my house plant lemon tree? The ones I posted about a while back? I used the juice to make ice cream, which was incredibly delicious (more about that another time). I candied the peel. Some we ate plain. Some I dipped in chocolate and we ate those too! Chocolate Sour Cream Bundt Cake

Is it part of my Jewish DNA that whenever a holiday (religious or otherwise) comes I think — “what food do I cook for this one?”

So, Valentine’s Day is coming. Also Ed’s birthday.

What do I cook for this one?

Chinese food. Maybe Beef with Orange or Chicken with Peanuts.

Scallion cakes?

He loves those Duck Legs with Hoisin sauce…….

Chocolate Sour Cream Bundt Cake

  • 4 ounces bittersweet chocolate

  • 2 cups flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 cup sugar

  • 1/2 cup butter

  • 2 eggs

  • 1 cup sour cream

  • 1-1/2 teaspoons vanilla extract

Preheat the oven to 350 degrees. Lightly grease a bundt pan. Melt the chocolate in the top part of a double boiler set over barely simmering water. When the chocolate has melted, remove the top pan and let the chocolate cool slightly. Mix the flour, baking soda, baking powder and salt in a bowl. Set aside. In the bowl of an electric mixer, cream the sugar and butter on medium speed for 3-4 minutes, or until the mixture is smooth and creamy. Add the eggs and beat for 2-3 minutes, until well blended. Add the flour mixture alternating with the sour cream. Stir in the vanilla extract. Stir in the melted chocolate and mix until the batter has a uniform color. Pour the batter into the prepared bundt pan. Bake for 45 minutes or until a cake tester inserted into the center comes out clean. Cool the cake in the pan for 10 minutes. Invert onto a cake rack to cool completely.

 

Makes 12-16 servings

Stuffed Strawberries

I agree 100%. For me — strawberries are my favorite fruit (ok, I also like a good nectarine!).

Mostly I like strawberries plain, because if you get a sweet, fragrant, ruby-red strawberry you don’t need anything else, although whipped cream is always welcome.

But if you’re like most of us and aren’t able to get the perfect farmer’s market berries and you have to rely on fruit from the supermarket ok, they’re never the best there is, but you can prepare them in ways that make the most of the fruit.

For instance: stuffed strawberries! They’re really just larger berries that are cut and stuffed with sweetened cheese and whipped cream. They look fancy but actually quite easy to make and take very little prep work! Check out the instructions and see for yourself — also, if you don’t have a pastry bag or parchment paper or foil to make one, you can use a small spoon to fill the berry middles.

You can make this dish even more glamorous with a sauce — just melt some preserves. That’s it!

You can make them ahead!

Stuffed Strawberries

  • 16-18 large strawberries

  • 1/2 cup whipping cream

  • 1/3 cup mascarpone cheese (or use cream cheese at room temperature)

  • 1 tablespoon dark rum, orange flavored brandy or orange juice

  • 1 tablespoon confectioners' sugar

  • freshly grated nutmeg or chocolate shavings

  • thin shreds of orange peel, optional

  • orange marmalade or other jam, optional

Wash and dry the berries but leave the hulls on. Place the berries on a cutting board with the hull down. Cut the berries from the narrow end into quarters up to the hull, but without cutting through or breaking the hull. Gently separate the berry into quarters. Beat the cream and mascarpone cheese with the rum and confectioners’ sugar until the mixture is thick. Place the mixture into a pastry bag and fill each berry piping from the stem end up to the narrow end. Sprinkle with nutmeg or chocolate shavings. Garnish with orange peel if desired.

For optional sauce: melt the jam, spoon it onto dessert dishes and place stuffed strawberries on top

Makes 4-6 servings

Simmered Strawberry Fool

This dessert may look very fancy and I placed it on a very fancy plate. 

BUT: other than serving fresh fruit as is, this is among the simplest, easiest desserts ever. And you can also serve it in a plain old dish, custard cup, individual ramekin. However you wish.

The point is, you can transform this into a festive Shavuot holiday dessert just by using a lovely serving piece. The prep is a cinch.

Most of the time a fruit fool is a simple blend of crushed fruit and whipped cream (sometimes with vanilla or another extract added). The extra step of cooking the fruit and adding Balsamic vinegar gives the dish a richer, deeper flavor. Well worth the few (less than 10) minutes of time it takes.

Strawberry Fool 

  • one pint strawberries

  • 1/2 cup sugar

  • 2 tablespoons Balsamic vinegar

  • 1/2 teaspoon cinnamon

  • 1/2 teaspoon finely grated fresh orange peel

  • 1 cup heavy cream

  • 1/2 teaspoon vanilla extract

  • Extra berries, cookie, chocolate shavings, mint leaves, etc. for garnish


Clean the strawberries, remove the stems and chop the berries into small pieces. Place the berries and sugar in a saucepan and cook over medium-high heat for 5-6 minutes, stirring frequently. Stir in the Balsamic vinegar, cinnamon and orange peel and cook for another 2-3 minutes or until the liquid is dark and syrupy. Remove from the heat and let cool. Whip the cream with the vanilla extract until thick. Fold the strawberry mixture into the whipped cream until well blended. Spoon the mixture onto dessert dishes (over berries or cookies, if desired). Garnish with berries, chocolate shavings, etc.

Banana Fudge Brownies

If you like fudgy brownies, you have to try these! The mashed up bananas I added to the batter make them incredibly moist. And the fruit flavor is a perfect balance to the sweet from sugar and chocolate.

The recipe is simple too, easy enough for kids, and a good lesson too, not just on cooking but on how to avoid food waste. I made these when I had two soft, older bananas — no one was going to eat them out of hand and they weren’t enough for banana bread.

Makes a memorable treat on Valentine’s Day.

Banana Fudge Brownies

  • 6 ounces semisweet chocolate (1 cup of chips)

  • 1/2 cup butter

  • 1 cup sugar

  • 2 large eggs

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extract

  • 2 medium bananas, cut into small pieces

Preheat the oven to 350 degrees. Lightly grease an 8" or 9” square baking pan. Melt the chocolate and butter together in the top part of a double boiler over barely simmering water. When the ingredients have melted, blend them thoroughly. Remove the pan from the heat and separate the top part of the double boiler from the bottom. Combine the sugar and eggs in a large bowl and beat with an electric mixer set at medium speed for 2-3 minutes or until the mixture is as thick and pale. Add the flour, baking powder, salt and vanilla extract and stir to blend them in. Add the chocolate mixture and blend it in thoroughly. Fold in the banana pieces. Pour the batter into the prepared pan. Bake for 30 minutes. Let the brownies cool in the pan. Cut into 16 pieces.

Rack of Lamb with Mustard, Apricot and Rosemary

We never eat out on Valentine’s Day. Restaurants are too crowded, the service is usually awful and the food not worth leaving the comforts of home.

Besides, there’s always the next day. My taste buds don’t know and don’t care if it’s February 14th or 15th. Valentine’s Day is an “extra” that, for us, doesn’t need the same kind of clock-like precision of Rosh Hashanah or Passover.

But I do always make a lovely dinner and serve on lovely plates with lovely utensils.

Ed would prefer Chinese food, but that’s too much of a fuss for the evening. So: rack of lamb. It’s easy. Simple. No fuss at all. An indulgence, but we deserve it, don’t we?

Roast Rack of Lamb with Mustard, Apricot and Rosemary

  •  1 whole rack of lamb

  • 1 tablespoon Dijon mustard

  • 1 tablespoon apricot preserves

  • salt and freshly ground black pepper to taste

  • 1 teaspoon chopped fresh rosemary (or use 1/2 teaspoon dried, crushed rosemary)

Preheat the oven to 450 degrees. Place the meat in a roasting pan. Mix the mustard and preserves and spread on the top surface. Sprinkle with salt, pepper and rosemary. Roast for 20-35 minutes, depending on degree of doneness desired (a meat thermometer should register between 120-140 degrees). Let the meat rest a few minutes before carving.

 

Makes 2-3 servings

 

Strawberry Shortcake (Without the cake)

The strawberries are fabulous right now -- the local ones anyway. They're sweet, juicy and fragrant. They're small to medium rather than gigantic -- like the year-round supermarket staples, which are dry, tasteless and smell like plastic. The strawberries you can buy now are the kind I remember strawberries from long ago, (especially the ones I picked right off the plants in my parents' garden).

If you are lucky enough to get good, seasonal strawberries, try this recipe. I call it Strawberry Shortcake without Cake because the whipped cream mixture, which is made with mascarpone cheese, is thick, almost like a really moist cake, and yet it is sort of like whipped cream.

So easy too!

Remember this recipe next Passover. Or Valentine's Day. Or July 4th for that matter!

Make the cream part ahead and top it with berries just before you serve it. Lovely with coffee or tea and also an after dinner drink (brandy and so on).

Strawberry Shortcake without Cake

  • 1 pint strawberries
  • 1 cup whipping cream
  • 2/3 cup mascarpone cheese (or use whipped cream cheese)
  • 1 tablespoon sugar
  • 1 tablespoon grated fresh orange peel
  • 2 tablespoons Balsamic vinegar

Wash and dry the berries and remove the hulls. Make incisions into each berry as if to cut slices but do not slice through. Set aside. Whip the cream and mascarpone cheese with the sugar and orange peel until the mixture is thick. Fold in the Balsamic vinegar. Spoon equal amounts of the cheese mixture onto 4-6 dessert plates. Place sliced strawberries on top, gently moving the “almost” slices to fan them slightly.

Makes 4-6 servings

 

 

Valentine's Day Chocolate Fudge Brownies

I have told my husband not to buy me chocolate candy for Valentine's Day.

Sure, I love the thought, not to mention the taste (he knows how much I love buttercrunch!!!!!!).

But really, I need to NOT EAT candy for a variety of reasons including the number I see on the scale when I weigh myself each morning.

For Valentine's Day I am going to make brownies, which will be sufficient for the two of us to celebrate with a piece or two, then give the rest away to a friend of mine who loves sweets.

Then it will all be gone, we will have had a delicious, but calorie-limited Valentine's Day and that will be that until the next occasion.

 

Valentine's Day Chocolate Fudge BROWNIES

  • 3 ounces unsweetened chocolate
  • 1/3 cup butter
  • 2 large eggs
  • 1 cup sugar
  • 3/4 cup plus 2 tablespoons all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts, optional

Preheat the oven to 350 degrees. Lightly grease an 8" square baking pan.  Melt the chocolate and butter together in the top part of a double boiler set over barely simmering water. When the ingredients have melted, blend them thoroughly and remove the pan from the heat. Combine the eggs and sugar in a large bowl and beat them 2-3 minutes or until the mixture is thick and pale. Mix the flour, baking powder and salt in a bowl and stir this mixture into the chocolate mixture. Stir in the vanilla extract and nuts, if used. Spoon the batter into the prepared pan. Bake for 30 minutes. Cool the brownies in the pan. Cut them into 16 squares.

Makes 16
