Spinach and Cheese Bourekas

Many years ago I learned to make spinach pie, loaded with crumbled feta cheese and seasoned with fresh dill. My family absolutely loved it, so it was — still is — a regular item on my menu. It’s almost always part of my break-the-fast feast.

Most of the time I make spinach pie using buttered layers of phyllo pastry, which makes for a crispy, delicate crust for the savory spinach filling below.

But we like the dish so much that on Passover, I top the pie with buttered matzo.

At one time I used the filling for spanakopitas, making spinach-filled layers of phyllo dough into small triangles. These were perfect as hors d’oeuvre and I would make dozens at a time and stock them in the freezer.

That was a LOT of work!

This year, thanks to inspiration from my Facebook friend Dana Shrager (@Danastable), who posted her recipe for spinach and cheese bourekas as a treat for Purim, I realized that I could make those wonderful hors d’oeuvres again using puff pastry, as she suggested!

SO MUCH EASIER!

I made a whole bunch of these, using my recipe for spinach pie as filling but using puff pastry. All I can say is that I will never go back to phyllo dough for these hors d’oeuvres. My tasters gobbled these down and I served them again to everyone’s absolute delight.

Thanks Dana, for your suggestion to use puff pastry and also that these, triangular shape that they are, would be perfect for Purim. Yes. They are indeed!

Here’s the recipe for spinach and cheese filling and instructions on how to make the triangle bourekas.

Spinach and Cheese Bourekas

  • 1 10-ounce package frozen chopped spinach, thawed

  • 2 tablespoons olive oil

  • 1 medium onion, chopped

  • 1 large egg

  • 4 ounces feta cheese, crumbled

  • 3 tablespoons grated Parmesan cheese

  • 1 tablespoon finely chopped fresh dill

  • freshly ground black pepper to taste

  • 2 sheets puff pastry, defrosted

Preheat the oven to 375 degrees. Squeeze as much water out of the spinach as possible and set aside. Heat the olive oil in a saute pan over medium heat. Add the onion and cook for 2-3 minutes. Stir in the spinach and mix well. Remove the pan from the heat. Add the egg, feta cheese, Parmesan cheese, dill and pepper. Mix well and set aside. Using one sheet at a time, roll the puff pastry on a lightly floured board slightly thinner (I did 12”x9”). Cut each sheet on the long side into 4 equal strips (3”). Cut the strips into thirds (making 12 pieces). Place equal amounts of the filling in the center of each piece of dough. Fold the dough to enclose the filling and make a triangle. Press the edges to seal them. If necessary, wet the edges of the pieces before folding, OR, press the edges down with the tines of a fork. Refrigerate for at least 30 minutes before baking. Bake for about 15-18 minutes or until browned and crispy.

Apricot Puff Pastry Galettes

The fresh apricots have been glorious this summer. We’ve eaten them plain. I’ve used them for poached fruit and, best of all, for these EASY EASY to make tarts using packaged, frozen puff pastry.

The tarts in the photo were glazed with ginger preserves but I’ve also used apricot and peach jams. Occasionally I sprinkle some fresh chopped rosemary on top before baking.

Apricot Puff Pastry Galettes

  • 4 puff pastry squares (4-inch)

  • 4 apricots, sliced

  • 2 tablespoons sugar

  • freshly grated nutmeg

  • 3 tablespoons ginger (or other) preserves, heated

Preheat the oven to 425 degrees. Place the pastry squares on a parchment paper lined baking sheet. Prick the dough in a few places. Arrange equal amounts of the fruit on top of each square, leaving a border of 1/2-inch. Sprinkle equal amounts of the sugar on top of the fruit. Grate a small amount of nutmeg on top. Refrigerate for about 20 minutes. Bake for 18-20 minutes or until golden brown. Brush the top with preserves. Place back in the oven for 4-5 minutes. Eat warm or at room temperature.

Puff Pastry Pizza Redux

My need for simple, meatless dinners post new years just happened to coincide with a freezer failure yesterday.

Fortunately I have a spare, old freezer where I quickly placed all the non-thawed meat and other freezables.

I threw a lot of stuff out. None spoiled, but some too old or freezer burned or no longer wanted.

Here’s how I used the puff pastry and some mozzarella cheese that had thawed: puff pastry pizza, which I’ve made many times. I had a bit of ricotta cheese so I included some. I also used thawed frozen spinach instead of basil.

FRESH TOMATO PUFF PASTRY PIZZA

  • 3 large or 4 medium tomatoes, sliced about 1/4-inch thick

  • salt

  • 1 sheet puff pastry, thawed

  • 1/2 cup ricotta cheese

  • 1-1/2 cups shredded mozzarella cheese

  • 2 tablespoons grated Parmesan cheese

  • 1/4 cup chopped spinach (or 2 tablespoons chopped fresh basil)

  • 1 tablespoon olive oil

Preheat the oven to 425 degrees. Line a baking sheet with parchment paper. Place the tomatoes slices on a board, sprinkle with salt and let rest for about 30 minutes. Wipe the slices dry. Roll the puff pastry slightly thinner on a floured surface. Place the pastry on the baking sheet. Spread the surface with the ricotta cheese leaving a small border along the edges. Place the tomato slices on top. Sprinkle with the mozzarella cheese and Parmesan cheese. Sprinkle with the spinach or basil. Drizzle with olive oil. Refrigerate for about 20 minutes. Bake for about 20 minutes or until golden brown.

Makes 6-8 servings


Beet Tarte Tatin

Every New Year’s Eve my brother and sister-in-law come over for the day, my cousins sleep over for a couple of days. We start our celebration early with a round of drinks and hors d’oeuvre. A few hours later we have another round of drinks and hors d’oeuvre.

No dinner.

We have dessert much later, near midnight. The anticipation of something sweet helps keep us up so we can watch the ball drop and then go to bed.

Some of the hors d’oeuvre I serve are fancy, some plain; some homemade, some from a package (like the Spring Valley or Hebrew National franks-in-blankets that everyone loves).

A while ago I read a blog post about Beet tarte tatins and was inspired to make some because they looked and sounded so appealing. I made up my own recipe, tried it a few times and decided that they would be perfect as one of the fancies at this year’s New Year get-together.

I wrote down whose blog it was, so I could credit her with the inspiration, but I can’t find the paper and forgot the name.

But — to that wonderfully creative person who alerted me to beet tarte tatin —- thank you.

Here’s my recipe.

Beet Tarte Tatins

  • 2 tablespoons olive oil

  • 1 large beet (8-10 ounces)

  • 2 small chopped shallots or 1/3 cup chopped red onion

  • 1 teaspoon Mirin (rice vinegar)

  • 1 teaspoon brown sugar

  • 1 teaspoon crushed, dried rosemary (or 2 teaspoons chopped fresh rosemary)

  • salt to taste

  • 1/2 pound puff pastry

  • 2 teaspoons grated fresh orange peel

Preheat the oven to 350 degrees. Use a small amount of the olive oil to brush the insides of 6 muffin tins. Peel the beet and cut it into thin slices, then cut the slice to make them small enough to fit inside the muffin tins. Place the cut beet slices in a bowl. Add the shallots and toss the ingredients. In another small bowl, whisk together the remaining olive oil, Mirin and brown sugar and pour the dressing over the beet mixture. Sprinkle with the rosemary and salt and spoon equal amounts of the beet mixture inside the muffin tins. Cover the filled tins with aluminum foil and bake for 30 minutes. Remove the tin from the oven. Raise the oven heat to 400 degrees. Cut out 6 circles from the puff pastry to cover the top of the muffin tins. Place over the beets. Bake for another 20 minutes or until the pastry is puffed and golden brown. Carefully spoon each beet mixture from the bottom and turn it over onto a dish so that the pastry is at the bottom. Spoon any remaining beets that do not come up and place them on the tarte tatins. Garnish with the orange peel and serve (may be served hot or at room temperature).
